Trader Joe’s offers a wide variety of soups and broths. The majority of these are shelf-stable cans and boxes located in the grocery aisle, but there are sometimes fresh soups in plastic containers in the chilled/fresh food case.
Some of the soups, such as the canned lentil, minestrone and black bean soups, are chunky, hearty soups that stand well on their own. The lentil and black bean soups easily become a hearty meal when served over rice.
The shelf-stable boxes of soups are thin purees or broths. Many of these soups work well on their own, but are even better with some additions. For example, the Latin black bean soup becomes more satisfying and appealing with some added corn (fresh, frozen or canned) and roasted red pepper garnish (canned).
The vegetarian broth works well for sautéing when you don’t want to use oil.
