This is one of my favorite Italian-style entrees from Trader Joe’s. The most pleasant and unexpected thing about this entrée is that the sauce isn’t a cooked tomato sauce. Instead it’s mostly halved cherry tomatoes, chunks of zucchini and red pepper, and basil. The result is a fresher taste and firmer texture than most frozen entrees.
This dish is a little high in calories and fat, but it’s really filling. Balance it out with fresh salad for a healthy meal.
Note: The ingredient label does not specify the source of the rennet in the cheese. Typically, I don’t post products with unspecified rennet, because they may not be vegetarian. However, I submitted an info request through the Trader Joe’s web site and the reply was that this product is made with microbial rennet.
