The main ingredients in this salad are butter lettuce, kale, goat cheese and persimmons with a pomegranate dressing. I am not a huge persimmon fan, but this salad still worked for me.
Trader Joe’s wisely used firm persimmons, but cut them very fine. This results in nice color, crunch and a subtle persimmon flavor that goes really well with the pomegranate dressing. The addition of both almonds and pumpkin seeds is a bit odd, but not a negative.
This salad won’t replace my favorites, but it’s a nice option when I want a change. This salad is also interesting and impressive enough to earn a place on my holiday table.
