There’s quite a bit of overlap between lunch and dinner foods. Let’s assume that like many Amerian’s your lunch is smaller than dinner and needs to relatively quick and easy to prepare. Trader Joe’s has several chilled grab-and-go salads that are vegetarian. Just read the labels carefully, since the meat versions (chicken, bacon, etc.) look very similar to the vegetarian ones.
There are also several Middle Eastern style wraps that are filling, but a little on the dry side even with the included sauce. There’s also a Middle East Feast (vegan) plate that is great value, but about twice as many calories as most people need for lunch unless you happen to work as a lumberjack. The tofu spring roll (vegan) is tasty due to yummy peanut sauce, but falls apart easily.
If you have access to a stove or microwave at lunch time, your choices expand to include several soups and frozen entrees.
For weekend lunches make veggie burgers (vegan) with favorite toppings and serve with onion rings or fries.
