This salad didn’t look very exciting to me and raw kale can be a bit of chore to power through. However, two things make it work. The first is that the kale is cut into very small pieces. The second is that the lemon dressing is a perfect complement to the kale.
I don’t care for the combination of cranberries and tomatoes, but it’s easy enough to eat the 3 tomatoes separately. The addition of edamame and almonds also aren’t obvious choices to me, but they work fine especially the almonds and cranberries.
Unless, you’re a kale lover this salad is probably better as a side salad split between 2 people than a main salad for 1. An upside to all the kale is that it stays fresher longer than lettuce.

I don’t like veggies, esp kale. Edamame is ok, but I’m not crazy about it. This salad……this salad, though, is PHENOMENAL!! I really like it and the almonds and cranberries are the clincher.
The lemon dressing is just a perfect compliment. Thank you! I’m stuffing myself with its now, hopefully stockpiling long-lost nutrients.
