After years of only the Spinach Cranberry and Caesar Salad kits, I’ve been pleasantly surprised to see several new salad kits at my store. I assume this one is a seasonal item so try it while you can.
The salad mix consists of baby lettuces, spinach and kale. Use within a couple days of purchase, because baby lettuce doesn’t hold up well. If you need a longer-lasting salad kit, go with the Spinach Cranberry kit.
The toppings in the Harvest Blend kit are roasted pumpkin seeds, dates, raisins and pumpkin cornbread croutons. Nice choices, but I’d like twice the amount of toppings. However I understand that Trader Joe’s has to make the cost equation work. Add some sliced pear and maybe some goat cheese or gorgonzola to make this salad a bit more interesting and worthy of a special dinner.
The highlight of this salad kit is the dressing – a thick pumpkin vinaigrette with a nice balance between sweet and tangy. If TJ’s sold this dressing in a bottle, I’d definitely stock up.
