This is one of my son’s favorite dishes since potatoes and cheese are his favorite foods. However, I really don’t care for all-white food and like to include vegetables whenever I can. At the very least I add some frozen peas to this dish and cherry tomatoes or sliced mushrooms if I have them on hand.
Add peas just a couple minutes before this is finished cooking so the peas don’t get mushy. Saute mushrooms before adding to the gnocchi so you don’t end up with a watery dish. Sprinkle with some parmesan cheese or fresh herbs for a nice finishing touch. Don’t over cook or over stir this dish or it’ll get a bit gummy.
