Trader Joe’s black bean and corn enchiladas is one of my favorite frozen food items. This item appears to be identical to the Amy’s brand version, except for the packaging. 4 pineapples, plus bonus points for organic main ingredients and low price!
These enchiladas are made from corn tortillas, filled with beans, corn, tofu, zucchini, and covered in a mild tomato based enchilada sauce. They cook well in the microwave in approximately 5 minutes for a great quick lunch entree.
Unlike most frozen foods this one doesn’t seem to suffer from early thawing so I often move it from the freezer to fridge in the morning. It not only cooks a bit faster, but comes out of the tray without falling apart.
As with many foods, the serving size is laughable given that most people are going to eat both enchiladas in one sitting. However, I frequently make a combo plate with one of these enchiladas, one cheese enchilada, some black beans and a Southwest Salad. Yum!

Traders Joe’s doesn’t label products as gluten free but there are no ingredients in this product that have gluten. The enchilada wrap is corn meal.

I suspected that these were provided to TJ’s by Amy’s, since the ingredients appear to be comparable. When I couldn’t find them in stock at TJ’s, I tried Amy’s- which came as a single enchilada with the addition of rice and pinto beans, and for almost twice the cost of TJ’s. I find TJ’s to be tastier, eating one of the pair at a time; I add a tbs or so of TJ’s fiesta dip at the end, which is comparable to queso but cashew based instead of dairy, and makes the enchiladas even better.

I love these, and they have brought them back. The sauce is a bit different, but none the less, they are back in the freezer section. I bought some about a week ago. They stopped selling them when the original maker of the product, quit making them for Trader Joe’s, which I think is Amy’s.
