This is one of my new favorite foods from Trader Joe’s. I’m not generally a fan of riced cauliflower which I find to be an unsatisfying replacement for real rice. However this dish totally works due to an interesting and satisfying combination of ingredients, chickpeas, sweet potatoes, baked tofu, and roasted onions, and a flavorful tahini sauce.
My only complaint is that the cauliflower weeps when cooked in the microwave resulting in a more watery dish than I prefer. An easy fix is to drain a bit of water from the bowl after cooking but before stirring.
The serving size listed on the box is silly. This is barely enough for one person but fortunately both the low cost and low calories make this a perfect quick lunch for one person.
