This salad reminds me of the Squash & Quinoa Salad in that it has a lot of different ingredients that I wouldn’t have necessarily put together – quinoa, carrots, cranberries, chickpeas, edamame, tomatoes and pumpkin seeds. However, it works pretty well and is one of the few vegan salad options in the prepared foods case.
The dressing is carrot ginger miso that you will either love or hate. The taste is good, but the texture takes some getting used to – a little lumpy and fibrous.
As healthy as this salad sounds, it’s high enough in calories and fat that it’s pretty much all you should have for a meal. Fortunately, it’s a satisfying salad.
