This is one of three refrigerated salads (Country Italian and Southwest are the other two) that I look for every week. 4 pineapples for an interesting and filling salad!
This salad is an odd and busy mix of ingredients – butternut squash, quinoa, wheat berry, spinach, arugula, dried cranberries, golden raisins, toasted almonds, goat cheese, red onion and roasted red pepper. This somehow works, but I’d have scooped out the red pepper which I don’t think goes well with cranberries.
The dressing is a delicious honey sesame vinaigrette. The tahini gives it an unusually rich taste and texture. This is honestly one of those dressing you lick out of the container when no one is watching – it’s that good!
This salad is very filling due to the grains and makes a great lunch entree. Also works well as a side salad for 2 people for Indian and Mediterranean meals thanks to the raisins and tahini.
